- 2 pounds pork loin
- 1 cup apple cider
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
- 3 pounds sweet potatoes
- 1/2 cup heavy cream
- 2 tablespoons butter
- 1 tablespoon maple syrup
