  • 3 pounds sweet potatoes
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon maple syrup

Instructions

  1. Preheat the oven to 350°F.
  2. Season the pork loin with salt, pepper, and thyme.
  3. Heat olive oil in a skillet over medium-high heat and sear the pork on all sides.
  4. Transfer the pork to a roasting pan, pour apple cider over it, and roast for 1 hour.
  5. While the pork cooks, peel and chop the sweet potatoes.
  6. Boil sweet potatoes until tender, about 20 minutes.
  7. Drain and mash the sweet potatoes with heavy cream, butter, and maple syrup.
