  • 2 large eggs
  • 1 cup milk
  • 2 cups diced apples
  • ¾ cup brown sugar
  • ½ cup rolled oats
  • ¼ cup all-purpose flour
  • ¼ cup butter, softened
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together melted butter, eggs, and milk until well blended.
  4. Combine the wet and dry ingredients and stir in the diced apples.
  5. In a separate bowl, combine brown sugar, oats, flour, softened butter, and cinnamon for the streusel topping.
  6. Spoon the muffin batter into each muffin cup, then sprinkle the streusel topping on top.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean.
  8. Let cool for a few minutes before serving.
