  • 2 tablespoons melted butter
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugars, baking powder, baking soda, spices, and salt.
  3. In another bowl, whisk together the pumpkin puree, egg, oil, and vanilla.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the diced apples.
  5. In a small bowl, mix the oats, melted butter, brown sugar, and cinnamon for the streusel topping.
  6. Divide the muffin batter among the prepared muffin cups and sprinkle the streusel topping on each.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack to cool completely.
