Blueberry Muffins

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/3 cup milk
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine flour, sugar, salt, and baking powder.
  3. In another bowl, whisk together vegetable oil, egg, and milk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Fill the muffin cups about 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool slightly before serving.

Notes

  • For a sweeter muffin, increase sugar by 1/4 cup.
  • Try using frozen blueberries if fresh ones are not available.
