Bourbon BBQ Bacon Cheeseburger Meatball Subs

A mouthwatering twist on classic meatball subs featuring bourbon BBQ sauce and turkey bacon.

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup bourbon BBQ sauce
  • 8 slices turkey bacon, cooked and crumbled
  • 8 sub rolls
  • 1 cup shredded cheese (cheddar or your choice)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  3. Form mixture into meatballs, about 1 inch in size, and place on a baking sheet.
  4. Bake for 20-25 minutes or until cooked through.
  5. In a saucepan, heat the bourbon BBQ sauce and stir in crumbled turkey bacon.
  6. Toss the cooked meatballs in the BBQ sauce mixture.
  7. To assemble, place meatballs in sub rolls and sprinkle with cheese.
  8. Broil for 2-3 minutes until the cheese is melted and bubbly.

Notes

  • For extra flavor, let the meatballs sit in the BBQ sauce for a few minutes before serving.
  • Use whole grain rolls for a healthier option.
