  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and cubed
  • 4 cups vegetable broth
  • 1 cup cheddar cheese, shredded
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • 2 teaspoons dried parsley

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and minced garlic; sauté until the onion is translucent.
  3. Stir in the cubed potatoes and vegetable broth. Bring to a boil, then reduce to a simmer.
  4. Cook until the potatoes are tender, about 15-20 minutes.
  5. Using an immersion blender, blend the soup until smooth.
  6. Stir in the cheddar cheese and heavy cream until melted and well combined.
  7. Add the thyme and parsley, stirring to combine. Season with salt and pepper to taste.
