Cheesy Ranch Potatoes and Smoked Sausage

  • 2 pounds red potatoes
  • 1 pound smoked sausage
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dice the potatoes into small pieces.
  3. In a large bowl, combine potatoes, olive oil, and ranch seasoning. Toss to coat.
  4. Spread the potato mixture onto a baking sheet.
  5. Slice the smoked sausage and add it to the baking sheet.
  6. Bake for 25-30 minutes, or until potatoes are tender and golden.
  7. Remove from the oven and stir in the sour cream and half of the cheddar cheese.
  8. Top with remaining cheese and chopped green onions, then return to the oven for an additional 5-10 minutes until the cheese is melted.
