- 2 pounds red potatoes
- 1 pound smoked sausage
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 2 tablespoons olive oil
- Preheat the oven to 400°F (200°C).
- Wash and dice the potatoes into small pieces.
- In a large bowl, combine potatoes, olive oil, and ranch seasoning. Toss to coat.
- Spread the potato mixture onto a baking sheet.
- Slice the smoked sausage and add it to the baking sheet.
