Chicken Normandy (French Apple Cider Chicken)

  • 4 chicken breasts
  • 4 slices turkey bacon
  • 1 cup apple cider
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add olive oil and heat. Add chicken breasts, season with salt and pepper, and cook until golden on both sides.
  3. Remove chicken and add onion and garlic to the skillet, sauté until soft.
  4. Add apple cider and thyme, stirring to combine. Return chicken to the skillet.
  5. Cover and simmer for 20-25 minutes until chicken is cooked through.
  6. Crumble turkey bacon on top before serving.
