Chocolate Mousse Cake

  • 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • 4 large eggs, separated
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the chocolate and butter in a double boiler, stirring until smooth.
  3. In a separate bowl, whip the cream until soft peaks form.
  4. In another bowl, beat the egg yolks with the sugar and vanilla until light and fluffy.
  5. Fold the chocolate mixture into the egg yolk mixture.
  6. Gently fold in the whipped cream.
  7. In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form, then fold into the mousse mixture.
  8. Pour into a cake pan and refrigerate for at least 4 hours before serving.
