Coconut Curry Soup with Dumplings

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (carrots, bell peppers, etc.)
  • 1 tablespoon soy sauce
  • 1 lime, juiced
  • 1 package dumplings (store-bought or homemade)
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the coconut oil over medium heat. Add the diced onion and sauté until translucent.
  2. Stir in the garlic, ginger, and red curry paste and cook for another minute.
  3. Add the coconut milk and vegetable broth, then bring to a simmer.
  4. Add the mixed vegetables and soy sauce, cooking until the vegetables are tender.
  5. Gently add the dumplings and simmer until they are cooked through.
  6. Finish by stirring in the lime juice and garnish with fresh cilantro before serving.

Notes

  • Adjust the spice level by adding more or less curry paste.
  • For a heartier soup, add protein such as tofu or chickpeas.
