Cozy Roasted Poblano Soup

A comforting and creamy soup made with roasted poblano peppers and turkey bacon, perfect for chilly days.

  • 3 roasted poblano peppers
  • 4 slices turkey bacon
  • 1 cup onions, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place poblano peppers on a baking sheet and roast for 20 minutes until charred.
  3. In a pot, cook turkey bacon until crispy, then set aside.
  4. In the same pot, add onions and garlic, sauté until translucent.
  5. Peel and chop the roasted poblano peppers, then add them to the pot.
  6. Pour in chicken broth, bring to a boil, and then reduce heat to simmer for 15 minutes.
  7. Blend the soup until smooth, return to heat, and stir in heavy cream.
  8. Add cumin, salt, and pepper; simmer for another 5 minutes.
  9. Serve hot, garnished with crispy turkey bacon.

Notes

  • For a vegetarian version, substitute turkey bacon with smoked paprika for flavor.
  • You can adjust the spiciness by adding more or fewer poblano peppers.
