- 3 roasted poblano peppers
- 4 slices turkey bacon
- 1 cup onions, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
- Preheat oven to 400°F (200°C).
- Place poblano peppers on a baking sheet and roast for 20 minutes until charred.
- In a pot, cook turkey bacon until crispy, then set aside.
- In the same pot, add onions and garlic, sauté until translucent.
- Peel and chop the roasted poblano peppers, then add them to the pot.
- Pour in chicken broth, bring to a boil, and then reduce heat to simmer for 15 minutes.
- Blend the soup until smooth, return to heat, and stir in heavy cream.
- Add cumin, salt, and pepper; simmer for another 5 minutes.
- Serve hot, garnished with crispy turkey bacon.
Notes
- For a vegetarian version, substitute turkey bacon with smoked paprika for flavor.
- You can adjust the spiciness by adding more or fewer poblano peppers.
