Creamy Cowboy Soup Recipe

  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups potatoes, diced
  • 1 cup corn, frozen or fresh
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, add olive oil and sauté onions and garlic until fragrant.
  3. Add chicken ham and cook for another 2 minutes.
  4. Pour in chicken broth and add potatoes; bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Stir in corn, heavy cream, and seasonings; cook for an additional 5 minutes.
  7. Serve hot, garnished with crumbled turkey bacon.

Notes

  • Adjust seasoning to taste.
  • For a spicier kick, add diced jalapeños.
