Creamy French Onion and Mushroom Soup

  • 4 cups onions, thinly sliced
  • 2 cups mushrooms, sliced
  • 4 slices turkey bacon, chopped
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and add chopped turkey bacon. Cook until crispy.
  2. Add sliced onions and cook until they become translucent, about 10 minutes.
  3. Stir in the sliced mushrooms and cook for another 5 minutes.
  4. Pour in the beef broth and add thyme, salt, and pepper. Bring to a simmer.
  5. Reduce heat and stir in the heavy cream. Let cook for an additional 10 minutes.

Notes

  • This soup can be garnished with crispy bacon or fresh herbs for added flavor.
  • For a vegetarian version, use vegetable broth and omit the bacon.
