Creamy One-Pot Broccoli Cheddar Orzo

A delicious and creamy one-pot dish featuring orzo pasta, broccoli, cheddar cheese, and turkey bacon.

  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 4 slices turkey bacon
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Remove bacon and add orzo to the pot, stirring for about 2 minutes.
  3. Add chicken broth, salt, and pepper. Bring to a boil.
  4. Reduce heat and add broccoli. Cook until orzo is tender and liquid is absorbed.
  5. Stir in cheddar cheese until melted and creamy.
  6. Chop turkey bacon and sprinkle on top before serving.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
  • Feel free to add more vegetables like peas or carrots.
