Ingredients

  • 4 medium russet potatoes
  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup shredded cheddar cheese

Instructions

  1. Peel and dice the potatoes.
  2. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  3. Add onions and garlic to the pot and sauté until translucent.
  4. Add the potatoes and chicken broth, and bring to a boil.
  5. Reduce heat, cover, and simmer until the potatoes are tender.
  6. Stir in heavy cream, salt, pepper, and paprika.
  7. Blend the soup until smooth, then return to heat.
  8. Serve with crumbled turkey bacon and shredded cheese on top.

  • For a vegetarian option, omit the turkey bacon.
