Easy Thai Coconut Curry Dumpling Soup

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 cups dumplings (store-bought or homemade)
  • 1 cup chopped kale
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until translucent.
  2. Stir in the garlic and ginger, cooking until fragrant.
  3. Add the red curry paste and cook for 1 minute.
  4. Pour in the vegetable broth and coconut milk, stirring to combine.
  5. Bring the soup to a simmer and add the dumplings.
  6. Cook according to dumpling package instructions.
  7. Add chopped kale and let it wilt.
  8. Stir in the soy sauce and lime juice just before serving.
  9. Garnish with fresh cilantro and green onions.
