This hearty Gnocchi Zuppa Toscana combines the rich flavors of soup with the comfort of gnocchi and turkey bacon.

Ingredients

  • 1 tablespoon olive oil
  • 4 ounces turkey bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound gnocchi
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy.
  3. Sauté the onion and garlic until tender.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the gnocchi and cook according to package instructions.
  6. Stir in the kale and heavy cream, and season with red pepper flakes, salt, and pepper.
  7. Serve hot.

Notes

  • For a vegetarian version, omit the turkey bacon and add more vegetables.
  • Feel free to adjust the spice level by adding more or less red pepper flakes.
