Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, melted coconut oil, and brown sugar.
  3. In another bowl, combine flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the non-dairy milk and vanilla extract.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until lightly golden.
  7. Let cool before serving.
