  • 1 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1/4 cup orange sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  5. Alternate adding the flour mixture and buttermilk to the creamed mixture, starting and ending with the flour.
  6. Drop tablespoon-sized amounts onto the prepared baking sheet, spacing them apart.
  7. Bake for 10-12 minutes or until set. Allow to cool on wire racks.
  8. For the filling, beat together the cream cheese, powdered sugar, and vanilla until smooth.
  9. Spread or pipe the filling onto the flat side of a cookie, then top with another cookie to make a sandwich.
  10. Sprinkle with orange sprinkles if desired and serve.

Notes

  • For a sweeter flavor, consider adding chocolate chips to the batter.
  • Allow the whoopie pies to chill in the refrigerator for 30 minutes before serving for better texture.
