Healthy Raspberry Cheesecake Bars

Ingredients

  • 1 cup almond flour
  • 2 tablespoons coconut oil
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 2 cups cashews, soaked
  • 1/3 cup coconut cream
  • 1/4 cup honey or agave syrup
  • 1/4 cup fresh raspberries
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, coconut oil, maple syrup, and vanilla extract until well combined.
  3. Press the mixture into the bottom of a lined baking dish and bake for 10 minutes.
  4. In a blender, combine soaked cashews, coconut cream, honey, raspberries, lemon juice, and salt until smooth.
  5. Pour the cheesecake mixture over the crust and spread evenly.
  6. Bake for another 25-30 minutes until set.
  7. Cool and refrigerate for at least 2 hours before slicing.

Notes

  • For a vegan option, substitute honey with agave syrup.
  • Top with extra raspberries before serving for garnish.
