- 4 large sweet potatoes
- 1 pound ground turkey
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 ripe avocados, diced
- 1/4 cup fresh cilantro, chopped
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and prick them with a fork. Place them on a baking sheet and bake for about 45-50 minutes, or until tender.
- While the sweet potatoes bake, heat a large skillet over medium heat. Add the onion and garlic, cooking until softened.
- Add the ground turkey to the skillet, cooking until browned. Stir in the black beans, diced tomatoes, chili powder, cumin, paprika, salt, and black pepper. Simmer for 10-15 minutes.
- Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
- Spoon the turkey chili mixture into each sweet potato, topping with diced avocado and cilantro.
Notes
- For extra spice, add jalapeños to the chili mixture.
- These can be topped with cheese if desired.
