  • 16 ounces mushrooms, sliced
  • 4 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1/4 cup sour cream
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a pot over medium heat. Add chopped onions and sauté until translucent.
  2. Add sliced mushrooms and cook until they release their moisture.
  3. Pour in vegetable broth, soy sauce, and thyme; bring to a boil.
  4. Reduce heat and let it simmer for 20 minutes.
