  • 2 stalks celery, chopped
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups cooked pasta
  • 2 cups shredded cooked chicken
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, sautéing until soft and fragrant.
  3. Add the carrots and celery, cooking for about 5 minutes.
  4. Pour in the chicken broth and diced tomatoes, and stir in the thyme and oregano.
  5. Bring to a boil, then reduce to a simmer for 15 minutes.
  6. Stir in the cooked pasta and chicken, warming through.
  7. Season with salt and pepper to taste before serving.
