  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1 egg
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 2 cups assorted vegetables (bell peppers, zucchini, etc.)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix together ground beef, breadcrumbs, green onions, egg, soy sauce, sesame oil, ginger, and garlic until combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs in the preheated oven for 20 minutes.
  5. In the meantime, sauté the assorted vegetables in a skillet until tender.
  6. Serve the meatballs with the sautéed vegetables.
