1 pound beef tenderloin
8 ounces cremini mushrooms, finely chopped
1 shallot, minced
2 tablespoons Dijon mustard
1 pound puff pastry
1 egg, beaten
2 tablespoons olive oil
Salt to taste
Pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Heat olive oil in a skillet and sauté shallots until translucent.
Add mushrooms, salt, and pepper, cooking until liquid evaporates.
Remove from heat and stir in Dijon mustard.
Season beef with salt and pepper, sear in a hot pan until browned, and let cool.
Roll out puff pastry and cut into squares.
Place a tablespoon of mushroom mixture and a piece of beef in the center of each pastry square.
Wrap the pastry around the filling and seal edges.
Brush with beaten egg and place on a baking sheet.
Bake for 20-25 minutes until golden brown.
