- 2 cups mushrooms, diced
- 1 cup Gruyère cheese, shredded
- 1 tablespoon fresh thyme, chopped
- 1 cup pie crust, pre-made
- 3 tablespoons butter
- 1 tablespoon all-purpose flour
- 1 cup vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 375°F (190°C).
- In a skillet, melt the butter and sauté the mushrooms until tender.
- Stir in the flour and cook for 1 minute.
- Add the vegetable broth, salt, and pepper; stir until thickened.
- Remove from heat, add the thyme and cheese, and mix well.
- Roll out the pie crust and cut into circles to fit mini pie pans.
- Fill the crust with the mushroom mixture and cover with another piece of crust.
- Cut slits in the top crust for ventilation.
- Bake for 25-30 minutes, or until golden brown.
Notes
- For extra flavor, add sautéed onions or garlic to the filling.
