Mini Mushroom and Gruyère Pot Pies with Thyme

Delicious mini pot pies filled with savory mushrooms and rich Gruyère cheese, perfect for a comforting meal.

Ingredients

  • 2 cups mushrooms, diced
  • 1 cup Gruyère cheese, shredded
  • 1 tablespoon fresh thyme, chopped
  • 1 cup pie crust, pre-made
  • 3 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, melt the butter and sauté the mushrooms until tender.
  3. Stir in the flour and cook for 1 minute.
  4. Add the vegetable broth, salt, and pepper; stir until thickened.
  5. Remove from heat, add the thyme and cheese, and mix well.
  6. Roll out the pie crust and cut into circles to fit mini pie pans.
  7. Fill the crust with the mushroom mixture and cover with another piece of crust.
  8. Cut slits in the top crust for ventilation.
  9. Bake for 25-30 minutes, or until golden brown.

Notes

  • For extra flavor, add sautéed onions or garlic to the filling.
  • These pot pies can be made ahead of time and frozen.
