Mouthwatering Roasted Poblano Soup

A rich and flavorful soup made with roasted poblano peppers and turkey bacon.

Ingredients

  • 4 roasted poblano peppers
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add chopped onion and garlic. Saute until softened.
  3. Add roasted poblano peppers and cumin. Stir to combine.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Blend the soup until smooth, then stir in heavy cream. Heat through.
  6. Season with salt and black pepper to taste. Serve topped with crispy turkey bacon.

Notes

  • For a vegan version, substitute turkey bacon with a plant-based alternative and use coconut milk instead of heavy cream.
