  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 4 cups beef broth
  • 2 tablespoons vegetable oil
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add chopped onion and garlic, sauté until caramelized.
  2. Toast the dried chilies in a separate pan until fragrant, then blend them with the spices and beef broth until smooth.
  3. Add the beef chuck roast to the pot, pour the blended mixture over it, and simmer on low heat for about 3 hours until the meat is tender.
  4. Remove the meat, shred it, and return it to the pot to soak up more flavors.
  5. Warm the corn tortillas on a skillet, fill them with shredded beef, and top with cilantro and a squeeze of lime.

Notes
