One Pot Lasagna Soup

A comforting and hearty dish combining the flavors of lasagna in a simple soup form.

Ingredients

  • 1 pound ground turkey
  • 6 slices turkey bacon
  • 1 cup chopped chicken ham
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1 cup uncooked pasta
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey and turkey bacon until browned.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the crushed tomatoes and chicken broth.
  4. Add the oregano, basil, red pepper flakes, and season with salt and pepper.
  5. Bring to a boil then reduce to a simmer.
  6. Stir in the pasta and cook until al dente.
  7. Remove from heat and stir in ricotta cheese until combined.
  8. Serve hot topped with mozzarella and Parmesan cheese.

Notes

  • For a vegetarian option, omit the meat and use vegetable broth.
  • This soup can be made ahead of time and stored for later use.
