Outback Potato Soup

Ingredients

  • 4 large russet potatoes
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the cubed potatoes and chicken broth. Bring to a boil, then simmer until potatoes are tender.
  4. Use a potato masher to mash some of the potatoes for a thicker consistency.
  5. Stir in the heavy cream and diced chicken ham.
  6. Add paprika, salt, and pepper to taste.
  7. Serve hot, topped with crispy turkey bacon.
