- 4 large russet potatoes
- 1/2 cup turkey bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup green onions, sliced
- 1/2 cup shredded cheddar cheese
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, sauté the onions and garlic until translucent.
- Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Blend the soup until smooth, then stir in heavy cream, salt, pepper, and paprika.
- Top with reserved turkey bacon, green onions, and shredded cheese before serving.
Notes
- For a vegan version, substitute turkey bacon with smoked tempeh and use almond milk instead of heavy cream.
