  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup brown sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool completely before frosting.
  8. For the frosting, beat together the butter, powdered sugar, brown sugar, milk, and vanilla until smooth and creamy.
  9. Spread the frosting over the cooled bars and cut into squares to serve.
