  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) pumpkin puree
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) diced tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
  2. Add pumpkin puree, black beans, diced tomatoes, and vegetable broth to the pot. Stir to combine.
  3. Season with chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Bring to a simmer.
  4. Reduce heat and let it cook for about 20 minutes, stirring occasionally.
  5. Garnish with fresh cilantro before serving.

Notes

  • Adjust the level of spiciness by adding more or less cayenne pepper.
  • This chili can be made ahead and tastes even better the next day.
