  • 4 eggs

  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin spice
  • 8 oz cream cheese
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, sugar, brown sugar, and vegetable oil until well combined.
  3. Add in eggs one at a time, beating well after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin spice.
  5. Gradually add the dry mixture to the wet mixture and mix until just combined.
  6. In a separate bowl, blend cream cheese with powdered sugar until smooth.
  7. Pour half of the batter into a loaf pan, then add a layer of the cream cheese mixture, and top with the remaining batter.
  8. Bake for 60 minutes or until a toothpick comes out clean.
