Pumpkin & Mushroom Spaghetti with Crispy Bacon

Ingredients

  • 8 ounces spaghetti
  • 1 cup pumpkin puree
  • 1 cup sliced mushrooms
  • 4 slices turkey bacon
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook spaghetti according to package instructions. Drain and set aside.
  2. In a pan, cook the turkey bacon until crispy, then remove and chop.
  3. In the same pan, add olive oil and sauté garlic and mushrooms until tender.
  4. Add pumpkin puree, thyme, salt, and pepper, and cook for a few minutes.
  5. Toss the cooked spaghetti with the pumpkin mixture and add the chopped bacon.
  6. Serve hot, topped with grated Parmesan cheese.

Notes

  • For a vegan version, omit bacon and cheese, and use nutritional yeast.
  • Add spinach for extra nutrition.
