- 8 ounces spaghetti
- 1 cup pumpkin puree
- 1 cup sliced mushrooms
- 4 slices turkey bacon
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- Cook spaghetti according to package instructions. Drain and set aside.
- In a pan, cook the turkey bacon until crispy, then remove and chop.
- In the same pan, add olive oil and sauté garlic and mushrooms until tender.
- Add pumpkin puree, thyme, salt, and pepper, and cook for a few minutes.
- Toss the cooked spaghetti with the pumpkin mixture and add the chopped bacon.
- Serve hot, topped with grated Parmesan cheese.
Notes
- For a vegan version, omit bacon and cheese, and use nutritional yeast.
