  • 1 1/2 cups pumpkin puree
  • 1 cup ricotta cheese
  • 1 onion, thinly sliced
  • 4 slices turkey bacon, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 pie crust
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same pan, add the sliced onions and caramelize them over medium heat.
  4. In a bowl, mix together the pumpkin puree, ricotta cheese, eggs, salt, and pepper.
  5. Stir in the caramelized onions, turkey bacon, and sage.
  6. Pour the mixture into the pie crust and smooth the top.
  7. Bake for 45-50 minutes or until the filling is set and the crust is golden.
  8. Let cool slightly before slicing and serving.

Notes

  • For a vegetarian option, you can omit the turkey bacon.
