  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, sugar, and softened butter until creamy.
  3. Add in the eggs, one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, salt, and cream of tartar.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
