  • 1 cup feta cheese, crumbled
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons fresh thyme, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced pumpkin with olive oil, salt, and pepper.
  3. Spread the pumpkin on a baking sheet and roast for 25-30 minutes until tender.
  4. Once cooked, remove from the oven and let it cool slightly.
