  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 can (14 ounces) coconut milk
  • 3 cups vegetable broth
  • 1 cup chopped carrots
  • 1 cup snap peas
  • 2 cups spinach
  • 1 batch dumplings (see recipe)

Instructions

  1. Heat coconut oil in a pot over medium heat. Add onion and sauté until translucent.
  2. Add garlic, ginger, and curry powder, cooking for another minute.
  3. Pour in coconut milk and vegetable broth, bringing to a simmer.
  4. Add carrots and snap peas, cooking until tender.
