  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 medium yellow squash, diced
  • 1 medium bell pepper, diced
  • 1 can (14 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and garlic; sauté until soft.
  3. Stir in the zucchini, yellow squash, and bell pepper; cook until slightly tender.
  4. Add the diced tomatoes, vegetable broth, basil, and oregano; bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste before serving.

  • For a thicker soup, blend a portion of the soup and stir it back in.
