  • 2 cups roasted butternut squash
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon nutmeg
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the butternut squash in half and remove the seeds. Drizzle with olive oil and roast for 30-40 minutes until tender.
  3. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  4. In the same pot, sauté onions and garlic until translucent.
  5. Add roasted squash, vegetable broth, cumin, and nutmeg. Bring to a boil, then simmer for 15 minutes.
  6. Blend the soup until smooth. Stir in coconut milk and season with salt and pepper.
  7. Serve hot, topped with crumbled turkey bacon.
