- 2 cups roasted butternut squash
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon nutmeg
- 1 cup coconut milk
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Slice the butternut squash in half and remove the seeds. Drizzle with olive oil and roast for 30-40 minutes until tender.
- In a large pot, cook the turkey bacon until crispy. Remove and crumble.
