Shakshuka with Feta is a modern take on the classic dish, featuring poached eggs nestled in a spiced tomato sauce and topped with creamy feta cheese.

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can (14 oz) diced tomatoes
  • 4 large eggs
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup parsley, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the onion and cook until softened.
  2. Stir in the garlic and red bell pepper, cooking until the pepper is tender.
  3. Add cumin and paprika, cooking for another minute.
  4. Pour in the diced tomatoes, simmering for about 10 minutes.
  5. Make small wells in the sauce and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are set to your liking.
  7. Sprinkle with feta cheese and parsley before serving.
