Shepherd’s Pie Baked Potato

A hearty and delicious twist on traditional shepherd’s pie, this recipe combines the flavors of turkey bacon and beef in a baked potato.

  • 4 large baked potatoes
  • 1 cup cooked ground beef
  • 1/2 cup turkey bacon, chopped
  • 1 cup frozen mixed vegetables
  • 1/4 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare the baked potatoes by cutting them in half and scooping out some of the flesh.
  3. In a skillet, cook the turkey bacon until crispy.
  4. Add the ground beef, mixed vegetables, beef broth, Worcestershire sauce, salt, and pepper to the skillet and mix well.
  5. Fill the potato halves with the beef mixture, top with shredded cheese.
  6. Bake for 15-20 minutes or until the cheese is melted and bubbly.

Notes

  • Feel free to customize the vegetables based on what you have on hand.
  • For a spicier dish, add some hot sauce to the beef mixture.
