- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2/3 cup granulated sugar
- 1/3 cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon (for swirl)
- 1/4 cup brown sugar (for swirl)
- Preheat the oven to 350°F (175°C) and grease the mini loaf pans.
- In a large bowl, combine the pumpkin puree, oil, granulated sugar, brown sugar, eggs, and vanilla extract.
- In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, mix the brown sugar and ground cinnamon for the swirl.
- Pour half of the batter into the prepared pans, sprinkle half of the cinnamon swirl mixture over it, and then add the remaining batter on top.
- Finish by sprinkling the rest of the swirl mixture on top of the batter.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Notes
- For extra moisture, you can add a bit of sour cream or Greek yogurt to the batter.
