Simple Mini Pumpkin Bread with Cinnamon Swirl

A delightful treat for fall, this simple mini pumpkin bread features a cinnamon swirl that adds a burst of flavor to each bite.

  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon (for swirl)
  • 1/4 cup brown sugar (for swirl)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease the mini loaf pans.
  2. In a large bowl, combine the pumpkin puree, oil, granulated sugar, brown sugar, eggs, and vanilla extract.
  3. In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a small bowl, mix the brown sugar and ground cinnamon for the swirl.
  6. Pour half of the batter into the prepared pans, sprinkle half of the cinnamon swirl mixture over it, and then add the remaining batter on top.
  7. Finish by sprinkling the rest of the swirl mixture on top of the batter.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Notes

  • For extra moisture, you can add a bit of sour cream or Greek yogurt to the batter.
  • Feel free to add nuts or chocolate chips for added texture.
