Slow Cooker Chicken Burrito Bowl

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup cooked rice (optional)
  • 1 cup shredded cheese (optional)
  • 1 avocado, sliced (for serving)
  • 1 cup sour cream (for serving)

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add beans, corn, salsa, cumin, and chili powder over the chicken.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken using two forks and mix with other ingredients in the cooker.
  5. Serve over rice, with cheese, avocado, and sour cream on top.
