Sticky Apple Cider Chicken with Crisp Autumn Slaw

  • 4 chicken thighs bone-in, skin-on
  • 1 cup apple cider
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon Dijon mustard
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 cups shredded cabbage
  • 1 cup carrots, shredded
  • 1/4 cup apple, diced
  • 1/4 cup nuts, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix apple cider, soy sauce, maple syrup, Dijon mustard, garlic powder, onion powder, salt, black pepper, and red pepper flakes.
  3. Place chicken thighs in a baking dish and pour the apple cider mixture over them.
  4. Bake for 35-40 minutes, or until chicken is cooked through.
  5. While chicken bakes, mix cabbage, carrots, apple, and nuts in a separate bowl for the slaw.
  6. Serve chicken warm with the autumn slaw on the side.

Notes

  • Adjust the sweetness of the glaze by adding more or less maple syrup as preferred.
  • Feel free to add additional vegetables to the slaw if desired.
