- 4 chicken thighs bone-in, skin-on
- 1 cup apple cider
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon Dijon mustard
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 2 cups shredded cabbage
- 1 cup carrots, shredded
- 1/4 cup apple, diced
- 1/4 cup nuts, chopped (optional)
- Preheat oven to 375°F (190°C).
- In a bowl, mix apple cider, soy sauce, maple syrup, Dijon mustard, garlic powder, onion powder, salt, black pepper, and red pepper flakes.
- Place chicken thighs in a baking dish and pour the apple cider mixture over them.
- Bake for 35-40 minutes, or until chicken is cooked through.
- While chicken bakes, mix cabbage, carrots, apple, and nuts in a separate bowl for the slaw.
- Serve chicken warm with the autumn slaw on the side.
Notes
- Adjust the sweetness of the glaze by adding more or less maple syrup as preferred.
- Feel free to add additional vegetables to the slaw if desired.
