  • 4 medium sweet potatoes
  • 1 cup fresh cranberries
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes.
  3. Layer half of the sweet potato slices in a greased baking dish.
  4. Sprinkle half of the cranberries, brown sugar, cinnamon, nutmeg, salt, and pepper over the sweet potatoes.
  5. Repeat the layers with the remaining potatoes and cranberries.
  6. Pour the heavy cream over the top, then sprinkle with Parmesan cheese.
  7. Bake for 45-50 minutes or until the sweet potatoes are tender and the top is golden brown.
