  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Thai green curry paste
  • 400 milliliters coconut milk
  • 500 milliliters vegetable broth
  • 1 tablespoon soy sauce
  • 1 bell pepper, sliced
  • 100 grams snap peas
  • 1 tablespoon lime juice
  • Fresh basil for garnish

Instructions

  1. Cook the rice noodles according to package instructions, then set aside.
  2. In a large pot, heat the vegetable oil over medium heat and add the diced onion. Sauté until translucent.
  3. Add minced garlic and green curry paste, stirring for about 1 minute until fragrant.
  4. Pour in coconut milk and vegetable broth, bringing the mixture to a simmer.
  5. Add soy sauce, bell pepper, and snap peas, cooking until the vegetables are tender.
  6. Stir in lime juice and cooked noodles, mixing well to combine.
  7. Serve hot, garnished with fresh basil.
