- 1 cup pecan halves
- 1/2 cup brown sugar
- 1/2 cup coconut oil
- 1 cup almond milk
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- Preheat the oven to 350°F (175°C).
- In a saucepan, melt the coconut oil and stir in brown sugar.
- Evenly distribute pecan halves in the bottom of a cake pan.
- Pour the melted mixture over the pecans.
- In a bowl, combine flour, baking soda, and salt.
- In another bowl, mix almond milk and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until smooth.
- Pour the batter over the pecans in the cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool and invert onto a serving plate.
