Vegan Pecan Upside Down Cake

A delicious and moist vegan cake topped with caramelized pecans.

Ingredients

  • 1 cup pecan halves
  • 1/2 cup brown sugar
  • 1/2 cup coconut oil
  • 1 cup almond milk
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, melt the coconut oil and stir in brown sugar.
  3. Evenly distribute pecan halves in the bottom of a cake pan.
  4. Pour the melted mixture over the pecans.
  5. In a bowl, combine flour, baking soda, and salt.
  6. In another bowl, mix almond milk and vanilla extract.
  7. Add the wet ingredients to the dry ingredients and mix until smooth.
  8. Pour the batter over the pecans in the cake pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let cool and invert onto a serving plate.

  • Can be served warm or at room temperature.
