Vegan Pumpkin Wild Rice Soup

A warm and comforting vegan soup featuring pumpkin and wild rice.

Ingredients

  • 1 cup wild rice
  • 1 can (15 oz) pumpkin puree
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  2. Add wild rice and vegetable broth, bring to a boil, then reduce heat and simmer until rice is tender.
  3. Stir in pumpkin puree, coconut milk, curry powder, salt, pepper, and nutmeg. Cook for an additional 10 minutes.
  4. Adjust seasoning to taste, and stir in fresh parsley before serving.

Notes

  • This soup can be easily adjusted for spice by adding cayenne pepper if desired.
